Carefully remove the plastic wrap and set the radishes aside to pickle, stirring occasionally.
- Heat a drizzle of cooking oil in a large pan over medium-high heat. Add the scallion whites, ground turkey, salt and pepper. Cook, breaking up the meat, until browned and cooked through, 4-6 minutes. Stir in the cabbage and carrot mix, sweet soy glaze, garlic powder, half the Sriracha (add more if you like extra heat) and ¼ cup water (⅓ cup for 4 servings). Cook until the sauce thickens and coats the turkey, 2-3 minutes.
- Divide the large lettuce leaves among plates. Fill each with a portion of the shredded lettuce and the turkey mixture. Top with gochujang aioli, pickled radishes, crispy fried onions and scallion greens. Serve immediately.
