Spoon the chicken and sauce evenly over the flatbreads. Top with tomatoes, shallots and half the sliced jalapeño (add more for extra heat).
- Carefully remove the hot baking sheet(s) from the oven. Transfer the flatbreads to the sheet(s) and sprinkle evenly with Monterey Jack cheese. Bake until flatbreads are golden and crisp, 8-10 minutes. Meanwhile, in a small bowl, mix together a pinch of chili powder, sour cream and 2 tablespoons water. Season with salt, pepper and more chili powder to taste.
- Transfer baked flatbreads to a cutting board and cut into squares. Dollop with the crema and serve.

For less heat, remove all seeds and ribs from the jalapeño. For more heat, leave some or all of them in.
