Instructions

  1. Bring a medium pot of salted water to a boil. Trim the zucchini and halve it lengthwise, then thinly slice crosswise into half-moons. Thinly slice the scallions, separating the whites from the greens. Peel and mince or grate half of the ginger (use all for 4 servings).
  2. Heat a large drizzle of oil in a large pan over medium-high heat. Add the zucchini and cook, stirring occasionally, until lightly browned, 2-4 minutes. Transfer to a plate and wipe out the pan.
  3. In a medium bowl, whisk together the cornstarch, ponzu and soy sauce until smooth. Whisk in the stock concentrate, plum jam, gochujang and ¼ cup water (½ cup for 4 servings) until combined.
  4. Heat a drizzle of oil in the same pan over medium-high heat. Add the ground pork and season with a pinch of salt and pepper. Press into an even layer and cook undisturbed until browned on the bottom, 3-4 minutes. Break up the meat and continue cooking until cooked through, 2-4 minutes more. Stir in the scallion whites, ginger, garlic powder and sugar (¼ tsp for 2 servings, ½ tsp for 4). Cook until fragrant, 30-60 seconds. Stir in the sauce and cook until slightly thickened, 30-60 seconds. Turn off the heat.
  5. Once the water is boiling, add ¾ of the ramen noodles (save the rest for another use). Cook, stirring occasionally, until tender, 1-2 minutes. Drain and rinse thoroughly under cold water for 30 seconds to stop cooking and prevent sticking. Add the drained noodles, zucchini and butter (1 tbsp for 2 servings, 2 tbsp for 4) to the pan with the pork. Toss until the noodles are warmed through and everything is combined. If needed, add a splash of water to help coat the noodles in sauce. Taste and season with salt and pepper.
  6. Divide the stir-fry between bowls and top with scallion greens. Serve immediately.
