Instructions

  1. Cook the jasmine rice according to package directions, then keep it covered until ready to serve.
  2. While the rice cooks, prepare the vegetables: trim and slice the scallions, cut the zucchini, slice the mushrooms and prepare the carrot.
  3. Peel and finely chop or grate the ginger. Finely chop or grate the garlic.
  4. In a small bowl, stir together the soy sauce, white wine vinegar, sesame oil, sriracha, garlic and ginger.
  5. Cook the zucchini, mushrooms and carrot in a skillet until tender, seasoning with salt and black pepper. Transfer the vegetables to a plate or keep them to one side.
  6. In the same skillet, cook the ground beef, breaking it up as it browns. Season with salt and black pepper.
  7. Add the soy-ginger sauce to the cooked beef and stir until the beef is evenly coated.
  8. Divide the jasmine rice among bowls. Top with the saucy beef, cooked vegetables and scallions.
  9. Serve the bowls right away and mix everything together before eating so the sauce coats the rice and vegetables.

Recipe Tips

Cook the vegetables separately from the beef so each topping keeps its own texture before the bowl is mixed.

Use the sriracha to adjust the heat level to your preference.

Season the vegetables and beef with salt and black pepper as they cook, tasting before serving if needed.

Keep the rice covered after cooking so it stays warm and fluffy for assembling the bowls.
