Instructions

  1. Cook the rice according to package directions. Fluff and set aside.
  2. While the rice cooks, prepare the vegetables: peel and dice the carrot into small cubes. Trim the snap peas and cut into bite-sized pieces. Mince the garlic and grate the ginger. Slice the scallions, separating white and green parts.
  3. In a small bowl, whisk together the mayonnaise and sriracha to make the sriracha mayo. Set aside.
  4. In another small bowl, combine the sweet soy glaze, rice wine vinegar, sugar and a pinch of black pepper. Stir until sugar dissolves.
  5. Heat a large nonstick skillet or wok over medium-high heat. Add the cooking oil and sesame oil. Once hot, add the white parts of the scallions, garlic and ginger. Stir-fry for 30 seconds until fragrant.
  6. Add the diced carrot and snap peas. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  7. Add the cooked rice to the skillet, breaking up any clumps. Pour the soy glaze mixture over the rice and stir-fry for 2 minutes, ensuring everything is well coated and the rice is heated through. Season with salt and pepper to taste. Transfer the fried rice to serving bowls.
  8. In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet and fry until the whites are set but the yolks are still runny, about 2-3 minutes. Season with a pinch of salt.
  9. Place a fried egg on top of each bowl of fried rice. Drizzle with sriracha mayo and garnish with the green parts of the scallions. Serve immediately.

Recipe Tips

For extra crispy rice, use day-old rice or spread the freshly cooked rice on a baking sheet to cool before stir-frying.

If you don’t have sweet soy glaze, substitute with 3 tablespoons soy sauce + 1 tablespoon honey or brown sugar.

Adjust the amount of sriracha to your preferred spice level.

Feel free to swap the vegetables with whatever you have on hand, like bell peppers or broccoli.
