Instructions

  1. In a small bowl, whisk together ponzu sauce, soy sauce and sugar. Set aside.
  2. In another bowl, combine apricot jam and sweet Thai chili sauce to make the duck sauce. Set aside.
  3. Heat cooking oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it apart, until browned and cooked through, about 5 minutes. Season with salt and pepper.
  4. Add shredded carrots, shredded red cabbage and bok choy/napa cabbage to the skillet. Stir-fry for 2-3 minutes until vegetables begin to wilt.
