Instructions

  1. Preheat oven to 425°F (220°C). Halve the baby red potatoes. Strip rosemary leaves from stems and mince until you have 1/2 tablespoon. Mince or grate the garlic. Trim ends of green beans. In a small bowl, whisk together beef stock concentrate, ketchup, Dijon mustard, 3 tablespoons water, 1/4 teaspoon sugar and hot sauce to taste; set aside.
  2. Toss halved potatoes with a drizzle of vegetable oil, minced rosemary and generous pinches of salt and pepper. Arrange cut-side down on a lightly oiled baking sheet. Roast until browned and tender, 25-30 minutes.
  3. Melt 1/2 tablespoon butter in a large skillet over medium-high heat. Add garlic and cook until fragrant, about 30 seconds. Add panko breadcrumbs and cook, stirring constantly, until golden brown, 3-5 minutes. Season with salt and pepper. Transfer to a plate and wipe out the skillet.
  4. Pat the sirloin steak dry with paper towels; season all over with salt and pepper. Heat a drizzle of oil in the same skillet over medium-high heat. Add steak and cook to desired doneness, 4-7 minutes per side. Remove steak, tent with foil and let rest. Reduce heat to low; stir the prepared sauce into the skillet until combined. Remove from heat and season with pepper.
  5. While steak cooks, place green beans in a microwave-safe bowl with a splash of water. Cover with plastic wrap and poke a few holes. Microwave on high until tender, 2-3 minutes. Drain, then toss with 1 tablespoon butter, salt and pepper. Sprinkle with the garlic panko and toss gently.
