- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Cut potatoes into 1/2-inch rounds. Toss with 1 tablespoon cooking oil, salt and pepper. Spread on one side of the baking sheet. Roast for 10 minutes.
- Meanwhile, pick thyme leaves from stems. Finely chop pecans. In a small bowl, combine panko, half the thyme, chopped pecans, 2 teaspoons cooking oil and a pinch of salt. Set aside.
