Instructions

  1. Pat the duck breasts dry with paper towels and season generously with salt and pepper on all sides. Place them skin-side down in a large cold pan. Cook over medium heat until the skin is golden and crisp and most of the fat has rendered, about 15-20 minutes, pouring off excess fat as it accumulates. If the skin browns too quickly, reduce the heat. Flip and cook to your desired doneness, 3-5 minutes more. Transfer to a cutting board to rest. Wipe out the pan.
  2. Meanwhile, peel and dice the potatoes into ½-inch pieces. Place them in a medium pot and cover with salted water by 2 inches. Bring to a boil and cook until very tender, 15-20 minutes. Drain well.
  3. Strip the thyme leaves from the stems to get about 1 teaspoon (2 teaspoons for 4 servings). Mince the garlic. Halve the grape tomatoes and the lemon. Peel and mince the shallot until you have ¼ cup (½ cup for 4 servings); reserve any extra for another use.
  4. In the same pot used for the potatoes, melt the butter over medium heat. Add the garlic and cook until fragrant, 20-30 seconds. Add the drained potatoes, milk, salt and pepper. Mash until smooth and creamy. If needed, add a splash more milk. Cover to keep warm.
  5. Heat a drizzle of oil in the pan used for the duck over medium heat. Add the minced shallot and thyme. Cook until the shallot is softened, 2-3 minutes. Add the chicken demi-glace, cranberry jam and ¼ cup water (⅓ cup for 4 servings), stirring to break up the jam. Simmer until the sauce thickens and becomes glossy, 2-3 minutes. Stir in a squeeze of lemon juice. Season with pepper and additional lemon juice to taste.
  6. In a medium bowl, combine the watercress, halved tomatoes, a squeeze of lemon juice and a generous drizzle of olive oil. Toss to coat evenly. Season with salt and pepper. Thinly slice the rested duck breasts crosswise. Divide the mashed potatoes and sliced duck between plates. Drizzle the duck with the cranberry sauce. Serve the watercress salad on the side.
