Pan-Seared Duck Breasts with Cranberry Sauce and Creamy Mashed Potatoes

Dessert45 min836 cal / serving

This dish brings together the richness of perfectly seared duck with the bright, tart flavor of cranberry sauce. The crispy skin gives way to tender meat, while a buttery bed of mashed potatoes and a peppery watercress salad round out the plate. It’s a sophisticated meal that feels special enough for a celebration but simple enough for a weeknight.

The secret lies in rendering the duck fat slowly to achieve that golden, crackling crust. A quick pan sauce made with cranberry jam and chicken demi-glace adds depth and a beautiful glossy finish. Serve it all together for a balanced, satisfying dinner that will impress any guest.

Instructions

  1. Wash and dry all produce. Peel the potatoes and cut them into ½-inch cubes. Mince the garlic. Using a sharp knife, make shallow slits in the duck skin in a crosshatch pattern. Season the duck breasts generously with salt and pepper. Place them skin-side down in a large pan over medium heat. Cook until the fat renders and the skin is golden and crispy, about 10-15 minutes. Flip and cook to your desired doneness, 2-5 minutes more for medium.
  2. While the duck cooks, place the cubed potatoes in a medium pot. Add a large pinch of salt and enough water to cover by 1 inch. Bring to a boil and cook until the potatoes are easily pierced with a knife, 10-12 minutes. Drain and return the potatoes to the pot.
  3. In a small bowl, combine the minced garlic and 2 tablespoons of butter. Microwave on high until the butter melts, about 30 seconds. Strip 1 teaspoon of thyme leaves from the stems; discard the stems. Halve the grape tomatoes and the lemon. Halve, peel and mince the shallot until you have about ¼ cup.
  4. Add the garlic butter and ⅓ cup of milk to the pot with the potatoes. Mash with a potato masher or fork until smooth and creamy. Season with salt and pepper to taste. If needed, add a splash more milk for a creamier consistency. Cover to keep warm.
  5. Once the duck is cooked, transfer it to a cutting board and let it rest. Pour off all but 1 tablespoon of duck fat from the pan, leaving the browned bits. Return the pan to medium heat. Add the minced shallot and thyme leaves. Cook until the shallot softens, about 3 minutes. Stir in the chicken demi-glace, cranberry jam and ¼ cup of water, scraping up any browned bits. Let the sauce simmer until it thickens and becomes syrupy, about 2 minutes. Squeeze in a bit of lemon juice and season with pepper. Adjust with more lemon juice if desired.
  6. In a medium bowl, toss the watercress and halved tomatoes with a squeeze of lemon and a drizzle of olive oil. Season with salt and pepper. Thinly slice the duck breasts crosswise. Divide the mashed potatoes and sliced duck between plates. Drizzle the cranberry sauce over the duck. Serve the watercress salad on the side.

Recipe Tips

For extra crispy skin, pat the duck breasts dry before scoring and seasoning.

If your cranberry jam is thick, you can add a little more water to the sauce to reach a drizzling consistency.

Make sure to let the duck rest for at least 5 minutes before slicing to keep it juicy.

FAQ

Can I use frozen duck breasts?

Yes, but thaw them completely in the refrigerator overnight and pat dry before cooking to ensure crispy skin.

What can I substitute for chicken demi-glace?

You can use ½ cup of chicken broth mixed with 1 teaspoon of cornstarch as a thickener or use a store-bought demi-glace concentrate.

Can I make this dish ahead of time?

The mashed potatoes can be made a day ahead and reheated with a splash of milk. The duck is best cooked fresh, but you can prepare the sauce in advance and reheat gently.
