- Pour the stock mixture into the pan. Stir in the sausage and tomato. Bring to a gentle simmer, then cover the pan (use aluminum foil if your pan doesn’t have a lid). Cook until the liquid is slightly reduced, 2-3 minutes. Meanwhile, in another small bowl, mix the sour cream, hot sauce (to taste) and a pinch of salt.
