Instructions

  1. In a small pot, combine the pearl couscous, 1 cup water (2 cups for 4 servings) and a generous pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until tender, 6-8 minutes. Drain any excess water and set aside.

  5. In a large bowl, combine the spinach, lemon zest, diced cucumber, diced tomato, feta cheese, plumped raisins, a drizzle of olive oil and a squeeze of lemon juice. Season with salt and pepper. Add the chilled couscous and toss everything together.
  6. Slice the chicken crosswise. Divide the couscous salad among plates or bowls, top with the sliced chicken and serve with remaining lemon wedges on the side.
