- Cook half the bacon in a large pan over medium heat until crisp, 4-5 minutes per side. Transfer to a paper-towel-lined plate; discard grease from pan. Once cool, crumble the bacon.

- Wipe out the bacon pan, add a drizzle of olive oil and heat over medium-high. Add mushrooms and cook, tossing, until slightly crispy, 7-8 minutes. Remove and set aside.
- Add ravioli to the boiling water and cook until tender, 4-5 minutes. Reserve ½ cup cooking water, then drain. Meanwhile, in the mushroom pan, add a drizzle of olive oil and the shallot over medium-high heat. Cook until soft and lightly browned, about 3 minutes.
- Return ravioli to the pan with the shallot, add the reserved cooking water and 2 tablespoons butter. Bring to a simmer and let bubble until a thick sauce forms, 3-4 minutes. Remove from heat, let cool slightly, then stir in sour cream, crumbled bacon, mushrooms, half the chives and lemon zest. Season with salt and pepper.
- In a bowl, toss arugula with a squeeze of lemon and a drizzle of olive oil. Season with salt and pepper. Divide ravioli among plates, sprinkle with remaining chives and top with a small handful of arugula. Serve remaining arugula on the side.
