Instructions

  1. Bring a large pot of salted water to a boil. Add the rigatoni and cook until al dente, about 10-12 minutes. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, toast the walnuts in a dry skillet over medium heat until fragrant, about 2-3 minutes. Set aside.
  3. In the same skillet, melt 2 tablespoons of butter over medium heat. Cook, stirring frequently, until the butter turns golden brown and smells nutty, about 3-4 minutes.
  4. Add the minced garlic and chili flakes to the brown butter and cook for 30 seconds until fragrant.
  5. Add the asparagus pieces and cook until bright green and tender, about 3-4 minutes.
  6. Stir in the veggie stock concentrate and the juice of half the lemon. Add the cooked rigatoni and toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce.
  7. Remove from heat. Fold in the grated Parmesan and half the toasted walnuts.
  8. In a small bowl, combine the ricotta with the remaining lemon juice, salt and pepper to taste.
  9. Serve the pasta topped with dollops of lemony ricotta, remaining walnuts and sliced scallions.

Recipe Tips

For the best brown butter, use a light-colored pan so you can see the color change.

Reserve more pasta water than you think you’ll need-it’s the secret to a silky sauce.

Toast walnuts just until fragrant to avoid burning.
