Instructions

  1. In a small pot, combine rice, ¾ cup water and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
  2. Meanwhile, trim and thinly slice scallions, separating white and green parts. In a medium bowl, combine half the vinegar, ½ teaspoon sugar and a pinch of salt. Trim ends from cucumber and use a peeler to shave it into ribbons, discarding the seedy core. Add cucumber ribbons to the vinegar mixture and toss. Set aside, tossing occasionally.
  3. Heat a drizzle of oil in a large nonstick pan over medium-high heat. Add shredded carrots and cook, stirring, until just tender, about 1 minute. Season with salt and pepper. Transfer to a plate.
  4. Heat another drizzle of oil in the same pan over medium-high heat. Add scallion whites and cook until fragrant, about 1 minute. Add ground pork, salt and pepper. Cook, breaking up the meat, until browned and cooked through, 4-6 minutes. Stir in half the sesame seeds and the remaining vinegar; cook 30 seconds. Stir in bulgogi sauce, bring to a simmer, then remove from heat. Season with salt and pepper.
  5. In a small bowl, combine sour cream and sriracha to taste. Add water 1 teaspoon at a time until the mixture reaches a drizzling consistency. Season with salt.
  6. Fluff rice with a fork and stir in 1 tablespoon butter. Season with salt and pepper. Divide rice between bowls. Top with pork, carrots and pickled cucumber (drained). Drizzle with sriracha crema. Garnish with scallion greens and remaining sesame seeds. Serve.

For extra flavor, toast the sesame seeds in a dry pan over medium heat for 1-2 minutes before using.
