Instructions

  1. Preheat oven to 425°F (220°C) with a rack in the top position. Wash and dry all produce. Trim and thinly slice scallions, separating white and green parts. Peel and mince or grate ginger. Peel and mince garlic. Cut lime into wedges.
  2. Melt 1 tablespoon butter in a small pot over medium-high heat. Add scallion whites and half the ginger; cook until fragrant, about 1 minute.
  3. Add rice, ¾ cup water (1½ cups for 4 servings) and a pinch of salt to the pot. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender, 15-18 minutes. Remove from heat and keep covered until ready to serve.
  4. Meanwhile, rinse shrimp under cold water and pat dry with paper towels. In a medium bowl, toss shrimp with garlic, half the hoisin sauce (use all hoisin for 4 servings) and remaining ginger. Season with salt and pepper. Let marinate for at least 5 minutes.
  5. Trim green beans if needed. On a baking sheet, toss green beans with a drizzle of oil, salt and pepper. Roast on the top rack, tossing halfway through, until browned and slightly crisp, 12-15 minutes.
  6. Heat a drizzle of oil in a large pan over medium-high heat. Add marinated shrimp and cook, stirring, until opaque and cooked through, 3-4 minutes (internal temperature should reach 145°F / 63°C).
  7. Divide rice among plates. Top with green beans and shrimp. Sprinkle with scallion greens and sesame seeds. Serve with lime wedges on the side.

Recipe Tips

For best flavor, let the shrimp marinate for at least 5 minutes.

If you prefer extra-crispy green beans, roast them a few minutes longer.

Feel free to substitute jasmine rice with any long-grain rice, adjusting water and cooking time accordingly.
