Instructions

  1. Preheat your oven to 425°F (220°C). Trim the ends of the green beans and place them on a baking sheet. Drizzle with a little oil, season with salt and pepper and toss to coat. Roast for 12-15 minutes until tender and slightly charred.
  2. While the green beans roast, rinse the jasmine rice under cold water until the water runs clear. In a small saucepan, combine the rice with 1 cup of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes. Remove from heat and let stand covered for 5 minutes.
  3. Peel and mince the garlic. Peel and grate the ginger (or finely chop). Thinly slice the scallions, separating the white parts from the green tops. Zest and juice the lime.
  4. In a bowl, combine the shrimp with the hoisin sauce, half of the minced garlic and half of the grated ginger. Toss to coat evenly. Set aside to marinate for 5 minutes.
  5. Heat a large skillet or wok over medium-high heat. Add a drizzle of oil. Once hot, add the remaining garlic and ginger, along with the white parts of the scallions. Stir-fry for 30 seconds until fragrant.
  6. Add the marinated shrimp to the skillet, reserving any excess marinade. Cook for 2-3 minutes per side until the shrimp are pink and cooked through. If desired, add the reserved marinade and cook for another 30 seconds until slightly thickened.
  7. Fluff the cooked rice with a fork and stir in the green parts of the scallions and the lime zest.
  8. To serve, divide the ginger scallion rice between plates. Top with the hoisin glazed shrimp and roasted green beans. Sprinkle with sesame seeds and squeeze fresh lime juice over the top. Enjoy!
  9. If you don’t have an oven, you can blanch the green beans in boiling salted water for 3-4 minutes, then drain and toss with a little oil and salt.
