Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Dice sweet potatoes into 1/2-inch cubes. Core and dice bell pepper into 1/2-inch pieces. Dice pineapple into 1/2-inch chunks. Thinly slice scallions, separating white and green parts. Finely chop chili pepper (remove seeds for less heat).
  3. In a large bowl, combine ground pork, half the hoisin sauce, half the pineapple juice (reserved from pineapple), white parts of scallions and half the chili pepper. Tear bread into small pieces and add to bowl. Mix until just combined. Form into 4 oval meatloaves and place on prepared baking sheet.
  4. In a separate bowl, toss sweet potatoes, bell pepper and remaining pineapple chunks with a drizzle of oil, salt and pepper. Spread around meatloaves on baking sheet.
  5. Bake for 20 minutes. Meanwhile, mix remaining hoisin sauce with remaining pineapple juice to make glaze.
  6. Remove baking sheet from oven. Brush meatloaves with glaze. Return to oven and bake until meatloaves are cooked through (internal temp 160°F) and vegetables are tender, about 10-15 minutes more.
  7. Garnish meatloaves with remaining scallion greens and chili pepper. Serve with roasted vegetables.
