Instructions

  1. Preheat oven to 450°F. Wash and dry all produce. Peel and mince ginger until you have 1 tablespoon. Trim and thinly slice scallions, keeping greens and whites separate. Bring 2 cups salted water to a boil in a medium pot.
  2. In a medium bowl, combine ginger, scallion whites, ground beef, panko, garlic powder, 1 teaspoon sugar and 1 egg. Season with salt (about 1 teaspoon kosher salt) and pepper. Form into 1-inch meatballs and place on a lightly oiled baking sheet. Bake until browned on the surface, about 10 minutes.
  3. Once water is boiling, add jasmine rice to the pot. Cover, reduce heat to low and simmer until tender, 15-20 minutes. Fluff with a fork.
  4. Remove baking sheet from oven after 10 minutes. Using a spoon, glaze each meatball with a little hoisin sauce. Return to oven and bake until the glaze loses its shine, about 5 minutes.
  5. Heat 1 tablespoon vegetable oil in a large pan over medium-high heat. Add snow peas and cook, tossing, until tender, 4-5 minutes. Season with salt and pepper.
  6. Cut lime into wedges. Sprinkle meatballs with sesame seeds. Divide rice among plates, top with snow peas and meatballs. Garnish with scallion greens. Serve with lime wedges for squeezing.
