Instructions

  1. Place tortelloni and 1/2 cup water in a large microwave-safe bowl. Cover tightly with plastic wrap and microwave for 3-5 minutes, until pasta is tender. (If you don’t have a microwave, bring a large pot of salted water to a boil, add tortelloni, reduce to a simmer and cook 3-4 minutes until tender and floating.)
  2. Drain the tortelloni, then rinse with cold water until cooled. Shake off excess water and pat dry with paper towels.
  3. While the pasta cooks, wash and dry the produce. Halve the grape tomatoes. Quarter the mini cucumber lengthwise, then slice crosswise into 1/2-inch pieces. Trim and thinly slice the scallions.
  4. Return the dried tortelloni to the large bowl. Stir in the Greek vinaigrette, tomatoes, cucumber, scallions and half the feta cheese. Add more feta if desired. Taste and season with salt and pepper as needed.
  5. Divide the salad among bowls and serve at room temperature.

Recipe Tips

For best texture, serve the salad at room temperature. If refrigerating, let it sit out for 10 minutes before serving.

Feel free to add extra veggies like bell peppers or olives for more crunch and flavor.

If you prefer a creamier dressing, stir in a tablespoon of Greek yogurt or extra olive oil.

FAQ

Can I use a different type of pasta?

Yes, you can substitute cheese tortelloni with any filled pasta like ravioli or tortellini. For a gluten-free option, use gluten-free tortelloni or your favorite short pasta.

How long does this salad keep in the fridge?

Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta may absorb some dressing, so you can add a splash of vinaigrette before serving.

Can I make this salad ahead of time?

Absolutely! This salad is perfect for meal prep. Assemble it up to a day in advance, but add the feta just before serving to keep it fresh.
