Instructions

  1. Heat a drizzle of oil in a small pot over medium-high heat. Add 1/4 teaspoon curry powder (use 1/2 teaspoon for 4 servings) and cook, stirring, until fragrant, about 30 seconds. Stir in the rice, chicken stock concentrate, 3/4 cup water (1 1/2 cups for 4 servings) and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.

  5. Pat the chicken cutlets dry with paper towels and season all over with salt, pepper and the remaining curry powder. Heat a drizzle of oil in a large pan over medium-high heat. Add the chicken and cook until browned and cooked through, 3-5 minutes per side. If the chicken browns too quickly, reduce the heat to medium. During the last minute of cooking, reduce heat to medium and stir in 1 tablespoon butter (2 tablespoons for 4 servings) until melted. Spoon the butter over the chicken. Turn off the heat and transfer the chicken to a cutting board to rest.
