- Heat about ¼ inch of oil in a large, heavy-bottomed pan over medium-high heat. Once hot (a drop of batter sizzles immediately), working in batches, add coated shrimp in a single layer. Cook until golden brown and cooked through, 2-3 minutes per side. Use a slotted spoon to transfer to a paper-towel-lined plate. Season immediately with salt and pepper.
