Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil.
  2. Cook rice: In a small pot, combine 0.75 cup jasmine rice, 1.5 cups water and a pinch of salt. Bring to a boil, then reduce heat, cover and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  3. Prepare broccoli: Cut broccoli into small florets. On the prepared baking sheet, toss broccoli with 1 tablespoon cooking oil, 1/2 teaspoon salt and a pinch of black pepper. Roast for 15-18 minutes, until tender and lightly browned. Sprinkle with sesame seeds and toss.
  4. Make quick pickles: Slice the mini cucumber into thin rounds. In a small bowl, combine cucumber slices, 2 teaspoons white wine vinegar, 1/2 teaspoon sugar and a pinch of salt. Set aside to pickle.
  5. Prepare sweet-heat sauce: In a small bowl, mix together 2 tablespoons mayonnaise, 1 tablespoon apricot jam, 1 teaspoon sriracha and a pinch of garlic powder. Adjust to taste.
  6. Prepare tempura batter: In a medium bowl, whisk tempura batter mix with 1/2 cup ice-cold water (or as directed on package) until smooth. Batter should be thin and lump-free.
  7. Heat oil for frying: In a deep skillet or pot, add about 2 inches of cooking oil. Heat to 350°F (175°C).
  8. Coat shrimp: Pat shrimp dry with paper towels. Dip each shrimp into the tempura batter, letting excess drip off. Carefully place in hot oil. Fry in batches, without crowding, for 2-3 minutes per side until golden and crispy. Drain on paper towels. Season with a pinch of salt.
  9. Slice scallions: Thinly slice scallions, separating white and green parts.
  10. Assemble bowls: Divide rice among bowls. Top with sesame broccoli, pickled cucumbers (drained) and crispy shrimp. Drizzle with sweet-heat sauce. Garnish with sliced scallions.

Recipe Tips

For extra crispy tempura, use ice-cold water in the batter and keep the batter cold.

Don’t overcrowd the pan when frying shrimp; this ensures even cooking and crispiness.

If you prefer a milder sauce, reduce the sriracha or add more jam.

FAQ

Can I use frozen shrimp?

Yes, just thaw them completely and pat dry before battering.

What can I substitute for tempura batter mix?

You can make a simple batter with 1 cup all-purpose flour, 1/2 cup cornstarch, 1 teaspoon baking powder and 1 cup ice-cold water.

How do I reheat leftovers?

Reheat shrimp in an air fryer or oven at 375°F for 5-7 minutes to restore crispiness. Rice and broccoli can be microwaved.
