Instructions

  1. In a small pot, combine 1¼ cups water, the jasmine rice and a pinch of salt. Bring to a boil, then cover, reduce heat to low and simmer until tender, about 15 minutes.

  3. In a small bowl, combine 1 tablespoon of the white wine vinegar, soy sauce, veggie stock concentrate, 1 tablespoon water and 2 tablespoons sugar. Stir until the sugar dissolves. Set aside.
  4. Heat a thin layer of vegetable oil (about 2 tablespoons) in a large pan over medium-high heat. Add the pork in a single layer (work in batches if needed to avoid overcrowding). Cook, tossing occasionally, until browned on all sides, 5-8 minutes. Remove the pork from the pan and set aside.
