Instructions

  1. Preheat oven to 425°F. Line a baking sheet with foil and lightly oil or spray with cooking spray.

  5. Place crispy fried onions in a zip-top bag and crush into small pieces (not powder). Transfer to a shallow dish and stir in Monterey Jack cheese.
  6. Season chicken cutlets with salt and pepper. Brush one side of each cutlet with dijonnaise, then press that side into the onion-cheese mixture. Place coated side up on the prepared baking sheet.
  7. Roast chicken for 12-15 minutes, until golden and cooked through (internal temp 165°F).
  8. Serve chicken over mashed sweet potatoes and green beans. Drizzle remaining dijonnaise over the top or serve on the side.
