Instructions

  1. Preheat the oven to 425°F (220°C) with racks in the top and middle positions. Wash and dry the produce. Trim the green beans if needed. Zest the lemon, then cut it into quarters.
  2. In a medium bowl, combine the panko breadcrumbs, shredded mozzarella, Italian seasoning, 1 tablespoon olive oil, salt and pepper. Pat the chicken cutlets dry with paper towels and season both sides with salt and pepper. Spread the sour cream evenly over the tops of the chicken, then press the panko mixture firmly onto the sour cream-coated side (leave the undersides uncoated).
  3. On a baking sheet, toss the green beans with a drizzle of olive oil, salt and pepper. Place on the middle rack. Place the chicken on a separate baking sheet (or on the same sheet if using two) and put on the top rack. Roast until the green beans are browned and tender (12-15 minutes) and the chicken is golden brown and cooked through (15-20 minutes). If the green beans finish early, remove them and continue roasting the chicken.
  4. While the chicken and green beans roast, melt 1 tablespoon butter in a small pot over medium-high heat. Add the Israeli couscous and a pinch of salt; cook, stirring, until toasted (2-3 minutes). Pour in 1 cup water and the chicken stock concentrate. Bring to a boil, then cover and reduce the heat to low. Simmer until the couscous is tender (6-8 minutes). Turn off the heat and drain any excess liquid if needed.
  5. Once the chicken is done, stir the remaining 1 tablespoon butter into the couscous until melted. Add the lemon zest and a squeeze of lemon juice to taste. Season with salt and pepper.
  6. Divide the couscous, chicken and green beans among plates. Serve with the remaining lemon wedges on the side.

Recipe Tips

For extra crunch, press the panko mixture firmly onto the chicken so it adheres well.

If your green beans finish roasting before the chicken, simply remove them from the oven and keep warm.

Toast the couscous until fragrant and lightly golden for a nuttier flavor.

FAQ

Can I use regular couscous instead of Israeli couscous?

Yes, but cooking times will vary. Israeli couscous is larger and chewier; if using regular couscous, reduce the simmering time to about 5 minutes.

Can I substitute the chicken cutlets with chicken breasts?

Absolutely. If using chicken breasts, pound them to an even thickness (about 1/2 inch) for even cooking and adjust the roasting time as needed.

How do I store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave; the coating may lose some crispness.
