Instructions

  1. Preheat oven to 400°F. Bring a large pot of salted water to a boil. Wash and dry produce. Mince garlic. Chop parsley. Zest and quarter lemon. Slice tomatoes and mozzarella into ¼-inch rounds.
  2. Add fusilli to boiling water and cook until al dente, 9-11 minutes. Reserve ½ cup pasta water, then drain.
  3. While pasta cooks, heat a drizzle of olive oil in a large pan over medium-high heat. Add prosciutto in a single layer and sear until crispy, 2-3 minutes per side. Transfer to paper towels; reserve oil in pan.
  4. Season chicken with half the fry seasoning, salt and pepper. Heat the reserved oil in the same pan over medium-high heat. Cook chicken until browned and cooked through, 4-6 minutes per side. Transfer to a cutting board to rest; wipe out pan.
  5. Place garlic butter baguette on a lightly oiled baking sheet and bake until golden, 9-11 minutes.
  6. Melt butter in the same pan over medium-high heat. Add garlic and cook until fragrant, 30 seconds. Add cream sauce base, cream cheese, salt and pepper; cook, stirring, until smooth, 2-3 minutes. Add drained pasta and peas; cook until peas are warmed and sauce thickens, 1-2 minutes. Stir in half the parsley and a squeeze of lemon juice. Add pasta water if needed.
  7. Arrange tomato and mozzarella slices on a plate, overlapping. Drizzle with olive oil, season with salt and pepper, then drizzle with pesto and balsamic glaze.
  8. Slice chicken. Slice garlic bread. Divide pasta among bowls, top with chicken, crumbled prosciutto, lemon zest, Parmesan and remaining parsley. Serve with garlic bread, caprese salad and lemon wedges.
