Instructions

  1. Wash and dry produce. In a large pan over high heat, combine carrot slices and ¼ cup water. Cook, stirring occasionally, until water evaporates, 2-3 minutes.
  2. Meanwhile, pat shrimp dry with paper towels. Once water has evaporated, reduce heat to medium-high. Add a drizzle of cooking oil, shrimp, fajita spice blend, salt and pepper. Cook, stirring occasionally, until shrimp are pink and cooked through and carrots are tender, 4-6 minutes.
  3. Massage the grain blend package to separate grains. Partially open the package and microwave until warmed through, 60-90 seconds.
  4. Divide the warmed grain blend between shallow bowls. Top with the shrimp and carrot mixture. Drizzle with chimichurri to taste. Garnish with crispy fried onions and a drizzle of sour cream. Serve immediately.

Recipe Tips

For extra flavor, toast the grain blend in a dry pan before microwaving.

If you prefer a milder spice, reduce the fajita blend slightly.

Leftover chimichurri can be stored in the fridge for up to a week.

FAQ

Can I use a different protein instead of shrimp?

Yes, chicken or tofu work well. Adjust cooking time as needed.

Can I make this recipe ahead of time?

The components can be prepped separately, but assemble just before serving to keep the crispy onions crunchy.

Is this recipe gluten-free?

The grain blend contains wheat (barley, bulgur), so it is not gluten-free. Use a gluten-free grain blend if needed.
