Instructions

  1. Preheat oven to 350°F with racks in top and middle positions. Wash and dry potatoes; cut into ½-inch-thick wedges. Halve, peel and dice red onion into ¼-inch pieces. Drain and roughly chop the pickle. In a medium bowl, whisk together BBQ sauce, ketchup, chicken stock concentrates, cornstarch and 2 tablespoons water. Place 4 tablespoons butter in a microwave-safe bowl and microwave until melted, 30-60 seconds.
  2. On a baking sheet, toss potato wedges with a drizzle of oil, salt and pepper. Roast on top rack until browned and tender, 40-45 minutes.
  3. While potatoes roast, heat a drizzle of oil in a large pan over medium-high heat. Add diced onion and cook, stirring, until softened, 4-5 minutes. Add ground turkey, season with Southwest spice blend, salt and pepper. Cook, breaking up meat, until browned, 3-5 minutes. Add the BBQ sauce mixture and cook, stirring, until sauce thickens and turkey is cooked through, 2-3 minutes. Remove from heat and stir in chopped pickle.
  4. Separate top and bottom slider buns, keeping each group connected. Arrange bottom buns in a single layer in a 9×13-inch baking dish. Sprinkle cheddar cheese evenly over bottom buns. Spoon BBQ turkey mixture on top, then sprinkle with Monterey Jack cheese. Place top buns over the filling to form sliders.
  5. Brush melted butter over the top buns. Cover dish tightly with foil and bake on middle rack for 20 minutes. Remove foil and continue baking until buns are lightly browned and cheese is melted, 5-7 minutes more.
  6. Serve sliders and potato wedges family-style with ranch dressing on the side for dipping.
