Instructions

  1. Preheat oven to 425°F. Heat a medium dry pan over medium heat. Add bacon and cook, turning occasionally, until crispy, 6-10 minutes. Transfer to a paper towel-lined plate. Wipe out the pan.
  2. Trim, peel, and halve carrots lengthwise, then cut into ¼-inch half-moons. Halve and peel the onion; thinly slice one half and cut the other into ½-inch wedges. Halve the peach, remove the pit, and slice into ¼-inch slices. Halve the brioche buns.
  3. On a baking sheet, toss carrots with a drizzle of oil, salt, and pepper on one side. Toss onion wedges with oil, salt, and pepper on the other side. Roast on the top rack until lightly browned and tender, 12-15 minutes.
  4. Melt 1 tbsp butter in the same pan over medium-high heat. Add peach slices and cook, stirring, until softened, 6-8 minutes. Reduce heat to medium, add peach jam, 2 tbsp water, ½ tsp sugar, and ¼ tsp salt. Stir until mixture thickens and liquid evaporates, 2-3 minutes. Remove from heat.
  5. In a microwave-safe bowl, combine sliced onion, half the balsamic vinegar, 2 tbsp water, ½ tsp sugar, and ¼ tsp salt. Cover with plastic wrap and microwave for 30-45 seconds. Transfer pickled onion to a large bowl, reserving the pickling liquid in the medium bowl.
  6. Form beef into two patties, slightly wider than the buns. Season with salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Cook patties until browned, 3-5 minutes per side. In the last 1-2 minutes, top each patty with Gouda cheese, cover, and cook until melted.
  7. In the bowl with reserved pickling liquid, add mustard, 2 tbsp olive oil, a pinch of salt, and pepper. Whisk to combine. In a small bowl, mix BBQ sauce with the remaining balsamic vinegar.
  8. Toast buns, cut sides down, directly on the oven rack or a baking sheet, until golden, 5-7 minutes. Add arugula, almonds, roasted carrots, and dressing to the large bowl with pickled onion. Toss to combine.
  9. Spread cut sides of bottom buns with half the BBQ sauce. Fill buns with patties, bacon, caramelized peach, and roasted onion. Drizzle with remaining BBQ sauce. Serve burgers with the salad on the side.
