Ingredients
Instructions
- Preheat oven to 425°F. Wash and dry produce. Trim, peel and cut carrots on a diagonal into ½-inch-thick pieces. Trim and halve zucchini lengthwise, then slice crosswise into 1-inch-thick half-moons.
- In a medium bowl, gently combine ground beef, panko, garlic powder, salt (¾ tsp for 2 servings, 1¼ tsp for 4) and pepper. Form into two 1-inch-tall loaves (four loaves for 4 servings).
- Place meatloaves on one side of a lightly oiled baking sheet (line with foil for easier cleanup). Toss carrots and zucchini on the empty side with a drizzle of olive oil, salt and pepper. For 4 servings, use two baking sheets; roast meatloaves on middle rack and veggies on top rack. Roast on top rack until meatloaves are cooked through and veggies are browned and tender, 22-25 minutes. For extra-crispy veggies, remove meatloaves and continue roasting veggies 2-3 minutes more.
- Meanwhile, halve, peel and thinly slice onion. Pick parsley leaves from stems; roughly chop leaves. Heat a drizzle of oil in a medium nonstick pan over medium-high heat. Add onion and cook, stirring occasionally, until browned and softened, 6-9 minutes. Lower heat and add a splash of water if onion browns too quickly.
- Add cream cheese, stock concentrate, ½ cup water (1 cup for 4 servings) and ¾ tsp sugar (1½ tsp for 4 servings) to the pan. Cook until thickened, 1-3 minutes. Turn off heat; stir in 1 tbsp butter (2 tbsp for 4 servings) and a pinch of chopped parsley. Season with salt and pepper.
- Toss roasted veggies with half the sumac (all for 4 servings). Divide meatloaves and veggies between plates. Spoon caramelized onion sauce over meatloaves and garnish with remaining parsley.
Recipe Tips
For easier cleanup, line the baking sheet with foil before adding the meatloaves and veggies.
If the onions start to brown too quickly, lower the heat and add a splash of water to the pan.
For extra crispy roasted vegetables, remove the meatloaves from the baking sheet once done and continue roasting the veggies for 2-3 more minutes.

What can I use instead of sumac?
