- In a medium bowl, gently combine the ground beef, panko, garlic powder, 3/4 teaspoon salt and a pinch of black pepper. Form into two 1-inch-tall loaves.
- Place the meatloaves on one side of the prepared baking sheet. On the other side, toss the carrot pieces with a drizzle of olive oil, salt and pepper. Roast on the top rack until the meatloaves are cooked through and the carrots are tender and browned, 22-25 minutes. (For extra crispy veggies, remove the meatloaves and continue roasting the carrots for 2-3 more minutes.)
- While the meatloaves roast, heat a drizzle of cooking oil in a large nonstick pan over medium-high heat. Add the zucchini and green beans; cook, stirring, until softened and lightly browned, 5-7 minutes. Transfer to a plate and wipe out the pan.
- Add another drizzle of oil to the same pan over medium-high heat. Add the sliced onion; cook, stirring occasionally, until browned and softened, 6-9 minutes. If the onion browns too quickly, lower the heat and add a splash of water.
- To the pan with the onion, add the cream cheese, chicken stock concentrate, 1/2 cup water and 3/4 teaspoon sugar. Cook, stirring, until thickened, 1-3 minutes. Turn off the heat; stir in the butter and a pinch of chopped parsley. Season with salt and pepper to taste.
- Toss the cooked zucchini and green beans with the roasted carrots and half the sumac. Divide the meatloaves and vegetables between plates. Spoon the caramelized onion sauce over the meatloaves and garnish with remaining chopped parsley.
