Instructions

  1. Preheat oven to 375°F. Season chicken thighs with salt and pepper.
  2. In a large oven-safe skillet, cook pancetta over medium heat until crispy. Remove and set aside, leaving drippings in the pan.
  3. Add olive oil to the skillet. Sear chicken thighs skin-side down until golden, about 5 minutes. Flip and cook 2 more minutes. Remove chicken.
  4. Trim and halve Brussels sprouts. Add to the skillet cut-side down. Cook until browned, about 4 minutes. Stir in minced garlic and cook 1 minute.
  5. Return chicken to the skillet, skin-side up. Add chicken broth, thyme sprigs and cooked pancetta. Bring to a simmer.
  6. Transfer skillet to oven. Braise for 25-30 minutes until chicken is cooked through and tender.
  7. Meanwhile, boil red potatoes in salted water until tender. Drain and mash with butter, salt and pepper.
  8. Serve chicken and Brussels sprouts over mashed potatoes, spooning pan juices on top.
