Instructions

  1. Preheat oven to 425°F with racks in the top and middle positions. Wash and dry potatoes. Prick each potato all over with a fork. Wrap each in a damp paper towel and microwave on a plate until slightly softened, 7-8 minutes, flipping halfway.
  2. While potatoes microwave, dice the tomato into ½-inch pieces. Cut broccoli into bite-size florets. Thinly slice scallions, separating white and green parts. Place diced tomato in a small bowl and season lightly with salt; set aside. Crush the tortilla chips in their bag.
  3. Carefully cut a lengthwise slit into each microwaved potato, stopping about three-quarters of the way through (do not cut all the way). Place each potato on a piece of foil, drizzle with 1 teaspoon oil and season with salt and pepper. Wrap tightly in foil and place on a baking sheet. Roast on the top rack until fork-tender, 20-22 minutes.
  4. On a second baking sheet, toss broccoli with a drizzle of oil, salt and pepper. Roast on the middle rack until lightly browned and tender, 15-20 minutes.
  5. While the vegetables roast, heat a drizzle of oil in a small pot over medium-high heat. Add ground beef and scallion whites; season with salt and pepper. Cook, breaking up the meat, until browned and cooked through, 4-6 minutes. Drain excess grease if needed.
  6. Add Southwest spice blend, beef stock concentrate and tomato paste to the pot. Cook, stirring, until fragrant, about 30 seconds. Stir in ½ cup water. Reduce heat to medium and simmer until most of the liquid has evaporated, 8-10 minutes. Season with salt and pepper to taste. Remove from heat and cover to keep warm.
  7. Carefully unwrap the roasted potatoes. Halve each lengthwise and fluff the insides with a fork. Top each half with 1 tablespoon butter and a pinch of salt. Serve the potatoes alongside the chili, roasted broccoli, cheddar cheese, diced tomato, crushed tortilla chips, sour cream and scallion greens. Let everyone build their own loaded potato.
