Instructions

  1. Prepare the produce: cut the potatoes into even pieces, trim the green beans if needed and halve the lemon.
  2. Place the potatoes in a pot of salted water. Bring to a boil and cook until the potatoes are tender, then drain.
  3. Mash the drained potatoes with the sour cream until creamy. Season with salt to taste and keep warm.
  4. In a small bowl, stir the softened butter with the honey and a pinch of salt until smooth. Set the honey butter aside.
  5. Pat the chicken cutlets dry, then coat them all over with the sweet and smoky BBQ seasoning.
  6. Heat the cooking oil in a large skillet over medium-high heat. Add the seasoned chicken cutlets and cook, turning once, until browned on both sides and cooked through.
  7. While the chicken cooks, cook the green beans until tender-crisp. Toss them with a squeeze of lemon juice and season with salt to taste.
  8. Plate the mashed potatoes, lemony green beans and BBQ-spiced chicken. Spoon the honey butter over the warm chicken so it melts on top.
  9. Finish with chili flakes to taste and serve with any remaining lemon for squeezing over the green beans.

Recipe Tips

Let the butter soften before mixing so the honey blends in smoothly.

Use the chili flakes to taste; add a little for mild heat or more if you like spice.

Drain the potatoes well before mashing so the sour cream makes them creamy rather than watery.

Spoon the honey butter onto the chicken while it is still hot for the best melted finish.

FAQ

Can I leave out the chili flakes?

Yes. The chili flakes are best added to taste, so you can skip them for a milder plate.

What makes the green beans lemony?

A squeeze of fresh lemon juice is tossed with the cooked green beans just before serving.

Can I make the honey butter ahead?

Yes. Mix the softened butter, honey and salt in advance, then let it soften again before spooning it over the hot chicken.
