Instructions

  1. Preheat oven to 425°F. Wash and dry all produce. In a large bowl, toss cauliflower florets with panko breadcrumbs, a generous drizzle of vegetable oil and a pinch of salt and pepper. Spread on a baking sheet and roast until golden brown, about 25 minutes. (Don’t worry if some crumbs fall off.)

  5. In a small bowl, combine mayonnaise and minced garlic (start with a pinch and adjust to taste). Season with salt and pepper. Split brioche buns in half, place on a baking sheet and toast in the oven until golden, 3-5 minutes.
  6. Spread garlic aioli on the toasted buns, then top each with a burger patty and a generous portion of caramelized onions. Serve with the crispy cauliflower fries on the side.
