Instructions

  1. Wash and dry all produce. Trim the mini cucumber and slice it into thin rounds. In a shallow dish, combine the panko breadcrumbs, half of the Cajun spice blend, a drizzle of oil and a pinch of salt and pepper. Set aside.
  2. Pat the chicken cutlets dry with paper towels; season with salt and pepper. If the chicken is more than 1 inch thick, place it between two pieces of plastic wrap and pound to about ½ inch thickness. In a large bowl, mix the sour cream with the remaining Cajun spice blend, salt and pepper. Add the chicken and rub the sour cream mixture all over. One piece at a time, press the chicken into the panko mixture until fully coated on both sides.
  3. Spray the air fryer basket with nonstick cooking spray. Arrange the coated chicken pieces side by side in the basket (work in batches if needed). Spray the tops of the chicken with cooking spray. Air-fry at 375°F for 6 minutes. Flip the chicken, spray again and air-fry until golden and cooked through, about 6 more minutes.
  4. While the chicken cooks, place the cucumber slices in a small microwave-safe bowl. Add the white wine vinegar, 2 tablespoons water, 1 teaspoon sugar and a pinch of salt. Stir to combine, then microwave until the cucumber turns dark green, 1-2 minutes. Refrigerate until ready to use. In another small bowl, combine the honey and sriracha. (If the honey is too thick, warm the packet in hot water for a few seconds.) Add half of the mayonnaise and stir until smooth.
  5. Halve the brioche buns and toast them lightly. In a medium bowl, combine the coleslaw mix, buttermilk ranch dressing, the remaining mayonnaise, ½ teaspoon sugar and a pinch of salt and pepper. Toss to coat.
  6. Spread the hot honey mayo on the cut sides of the top buns. Drain the pickles. Assemble the sandwiches: place the crispy chicken on the bottom buns, top with pickles and close with the top buns. Serve the sandwiches alongside the ranch slaw.

Recipe Tips

For extra crispy chicken, make sure the panko coating is pressed on firmly and spray the tops generously with cooking spray before air-frying.

If you don’t have an air fryer, you can bake the chicken on a wire rack set over a baking sheet at 425°F for about 15 minutes, flipping halfway.
