Instructions

  1. Preheat oven to 425°F (220°C). Wash and cut potatoes into 1/2-inch thick wedges. Toss with 1 teaspoon cooking oil, salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden and crispy.
  2. While potatoes roast, prepare the citrus mojo: Zest and juice the lime. Zest the mandarin orange, then segment the orange (remove peel and pith, cut out segments). Finely chop the garlic.
  3. In a large bowl, combine ground pork, half of the lime zest, half of the orange zest, half of the chopped garlic, fajita spice blend, 1/2 teaspoon salt and a pinch of pepper. Mix gently and form into 2 patties, each about 1/2-inch thick.
  4. In a small bowl, mix mayonnaise, remaining lime zest, remaining orange zest, remaining garlic, Dijon mustard and a squeeze of lime juice (about 1 teaspoon). Season with salt and pepper to taste. Set aside.
  5. Heat 1 teaspoon cooking oil in a large skillet over medium-high heat. Cook patties for 4-5 minutes per side, until browned and cooked through (internal temperature 160°F). In the last minute, top each patty with Monterey Jack cheese and cover skillet to melt.
  6. Split potato buns and toast them in a toaster or under the broiler until lightly golden. Spread a thin layer of butter on cut sides if desired.
  7. Assemble burgers: Spread a generous amount of citrus mayo on the bottom bun. Place a cheesy patty, then top with orange segments and sliced dill pickles. Close with top bun.
