- Preheat oven to 400°F. Bring a small pot of water to a boil for the rice.
- Peel and grate the ginger. Trim and thinly slice the scallions, separating white and green parts. Cut the lime into wedges.
- In a small bowl, combine the bulgogi sauce, ketchup, Korean chili flakes and a squeeze of lime juice. Set aside.
- In a large bowl, mix the ground beef, panko breadcrumbs, half the scallion whites, half the grated ginger, 1 teaspoon salt and a few grinds of pepper. Form into two oval meatloaves and place on a baking sheet lined with parchment.
- Brush the meatloaves with half of the glaze. Bake for 20-25 minutes or until cooked through.
- Meanwhile, add the jasmine rice to the boiling water with a pinch of salt. Cook according to package directions. Fluff with a fork and stir in the remaining grated ginger and a pat of butter.
- Cut the broccoli into small florets. Toss with cooking oil, a pinch of salt and pepper. Spread on a separate baking sheet and roast for 15-18 minutes, until tender and lightly browned.
- Sprinkle the roasted broccoli with sesame seeds and the remaining scallion greens.
- Serve the meatloaves with the remaining glaze on the side, alongside the ginger rice and sesame broccoli. Garnish with lime wedges.
