Instructions

  1. In a small pot, combine jasmine rice, 1¼ cups water and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
  2. Meanwhile, wash and dry produce. Trim green beans if needed and cut crosswise into 2-inch pieces. Quarter the lime. Pick cilantro leaves from stems and roughly chop.
  3. Heat a drizzle of oil in a large pan over medium-high heat. Add ground beef, season with salt and pepper and press into an even layer with a spatula. Cook undisturbed until browned on the bottom, 3-4 minutes. Break up the meat and continue cooking until no longer pink, 2-4 minutes more. Drain excess grease if necessary.
  4. While beef cooks, place green beans in a medium microwave-safe bowl with a splash of water. Cover with plastic wrap and microwave until tender, 1-2 minutes. Alternatively, steam in a small pot with a splash of water for 5-7 minutes. Drain any excess water.
  5. Add cooked green beans, sweet Thai chili sauce, 2½ tablespoons sweet soy glaze, 1 tablespoon butter and ½ teaspoon sugar to the pan with beef. Cook, stirring, until everything is well coated, 1-2 minutes. Remove from heat and stir in a squeeze of lime juice to taste.
  6. Fluff the rice with a fork and stir in 1 tablespoon butter. Season with salt and pepper. Divide rice between bowls and top with the beef and green bean mixture. Sprinkle with crispy fried onions and chopped cilantro. Serve with remaining lime wedges.
