Instructions

  1. Preheat your oven to 425°F. Cut the potatoes into ½-inch wedges. On a baking sheet, toss the potatoes with 2 teaspoons of olive oil, salt and pepper. Spread in a single layer and roast until golden and tender, about 20 minutes, flipping halfway through.
