Instructions

  1. Preheat oven to 425°F. Line a baking sheet with foil and place it in the oven to heat. Bring a large pot of salted water to a boil. Wash and dry all produce. Cut potatoes into ½-inch-thick wedges. Thinly slice scallions, separating whites and greens. Halve the lemon. Chop tomatoes.
