Instructions

  1. Bring a large pot of salted water to a boil. Add the chicken romesco ravioli and cook according to package directions until tender. Reserve 1/2 cup pasta water, then drain.
  2. While the ravioli cooks, prepare the sauce. In a medium skillet over medium heat, melt 1 tablespoon butter. Add the chopped tomato and cook, stirring, for 2 minutes until softened.   4. Add the drained ravioli to the skillet with the sauce. Toss gently to coat, adding a splash of reserved pasta water if needed to loosen the sauce.
  5. Divide the ravioli between plates. Top with the lemony panko mixture and sprinkle with grated Parmesan cheese. Garnish with sliced scallions and serve immediately.
