- Reduce the heat to medium and add 2 tablespoons of butter to the same pan. Once melted, whisk in the flour and cook for 1-2 minutes, whisking constantly. Slowly whisk in the milk until smooth. Stir in the chicken stock concentrates and simmer until the sauce thickens, 1-2 minutes. Remove from heat and stir in the Italian cheese blend until melted. Season with salt and pepper to taste.
- Add the cooked cavatappi, pancetta mixture and about three-quarters of the roasted cauliflower to the cheese sauce, stirring to combine. Transfer the mixture to a lightly oiled baking dish. Top with the remaining cauliflower. Bake until bubbling, 5-7 minutes.
