Instructions

  1. Core the apple and slice it thinly. Pick the thyme leaves from the stems.
  2. In a small bowl, combine the apple slices and thyme leaves. Season with a pinch of salt and pepper.
  3. Lay out the sourdough slices. Spread ½ teaspoon Dijon mustard on each slice.
  4. Divide the white cheddar and cheddar evenly between two slices of bread. Top with the apple-thyme mixture, then the remaining cheese. Close with the other bread slices, mustard side down.
  5. Heat a large nonstick skillet or griddle over medium heat. Add 1 tablespoon butter and let it melt.
  6. Place both sandwiches in the skillet. Cook until the bottom is golden brown, about 3-4 minutes. Add the remaining butter, flip and cook until the other side is golden and the cheese is melted, another 3-4 minutes.
  7. While the sandwiches cook, in a medium bowl, combine arugula, dried cranberries and sunflower seeds. Drizzle with honey Dijon dressing and toss to coat.
  8. Remove sandwiches from the skillet, let cool slightly, then slice in half. Serve with the arugula salad on the side.

Recipe Tips

For extra caramelization, cook the apple slices in a little butter before assembling the sandwich.

Use a mix of white and yellow cheddar for a more complex flavor.

If you prefer a spicier kick, add a pinch of red pepper flakes to the apple mixture.

FAQ

Can I use a different type of bread?

Yes, you can substitute sourdough with any sturdy bread like ciabatta or whole wheat. Just ensure it can hold up to the fillings and griddling.

Can I make this sandwich vegetarian?

Absolutely! The recipe is already vegetarian. Just use a vegetarian-friendly Dijon mustard and dressing.

How do I prevent the sandwich from burning?

Cook over medium heat and keep an eye on the color. If the bread is browning too quickly, reduce the heat slightly.
