Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. Cut the potatoes into 1/2-inch wedges. Toss with fry seasoning, paprika, salt and pepper. Spread in a single layer on one side of the baking sheet.
  3. Pat the chicken legs dry with paper towels. Season with salt and pepper. Place on the other side of the baking sheet.
  4. In a small bowl, mix the apricot jam and Dijon mustard. Brush half the glaze over the chicken legs.
  5. Roast for 25-30 minutes, until the chicken is cooked through (internal temp 165°F) and the potatoes are tender and golden. Halfway through, brush the remaining glaze on the chicken and flip the potato wedges.
  6. While the chicken and potatoes roast, cut the broccoli into florets. Place in a microwave-safe bowl with 2 tablespoons water. Cover and microwave on high for 2-3 minutes until tender. Drain.
  7. Zest the lemon. Toss the broccoli with a pat of butter, lemon zest, chili flakes and a pinch of salt.
