Instructions

  1. Preheat oven to 425°F. In a medium bowl, toss cauliflower florets with panko, a drizzle of oil and a pinch of salt and pepper. Spread on a baking sheet and bake until browned and crisp, about 25 minutes. (Don’t worry if some crumbs fall off.)
  2. Halve, peel and thinly slice the red onion. Mince or grate 1 clove garlic.
  3. Heat a drizzle of oil in a large pan over medium heat. Add onion and cook until softened, 4-5 minutes, stirring occasionally. Stir in 1 tablespoon balsamic vinegar, then reduce heat to low. Cook until very soft, about 10 minutes. Season with salt and pepper. Transfer to a bowl and set aside.
  4. Shape the hamburger blend into two patties slightly wider than the buns. Season both sides with oregano, salt and pepper. Wipe out the pan with a paper towel, then heat a drizzle of oil over medium-high heat. Cook patties to desired doneness, 3-5 minutes per side. (Alternatively, grill over direct heat for 3-5 minutes per side; toast buns on the grill if desired.)
  5. In a small bowl, combine mayonnaise and a pinch of garlic. Season with salt, pepper and more garlic to taste. Split buns in half, place on a baking sheet and toast in the oven until golden, 3-5 minutes.
  6. Spread garlic aioli on the toasted buns. Fill each with a burger patty and top with balsamic onions. Serve with crispy cauliflower on the side.
