Instructions

  1. Preheat oven to 425°F. Cut potatoes into 1/2-inch wedges. Toss with a drizzle of oil, salt and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden and crispy.
  2. Meanwhile, finely chop basil leaves. In a small bowl, combine chopped basil, mayonnaise, sour cream and a pinch of salt. Set aside.
  3. In a medium bowl, combine ground beef, Italian seasoning, garlic powder, salt and pepper. Divide into 4 equal portions. Flatten each into a thin patty. Place 1/4 cup mozzarella in the center of two patties. Top with remaining patties, sealing edges to enclose cheese. Season outside with salt and pepper.
  4. Slice tomato into 1/2-inch rounds. Heat a grill pan or skillet over medium-high heat. Cook tomato slices for 2-3 minutes per side until charred. Remove and set aside.
  5. In the same pan, cook patties for 4-5 minutes per side for medium doneness. During last minute, split brioche buns and toast cut-side down in the pan or on the grill.
  6. Spread basil sauce on bottom buns. Place patties, then top with griddled tomato slices. Close with top buns.
  7. Sprinkle roasted potato wedges with Parmesan cheese and toss to coat. Serve alongside burgers.
