Instructions

  1. Adjust oven rack to middle position and set broiler to high. Line a baking sheet with foil. Wash and dry produce. Trim green beans if necessary. Toss green beans on prepared sheet with a drizzle of oil, salt and pepper. Broil on middle rack until tender and starting to blister and brown in spots, 6-10 minutes. Keep an eye on them to prevent burning.
  2. While green beans broil, open package of chicken and drain off any excess liquid. Heat a drizzle of oil in a medium pan over medium-high heat. Add chicken; season with salt and pepper. Cook, stirring occasionally, until browned and cooked through, 4-6 minutes. Add pineapple and its juice. Cook, stirring, until most of the liquid has cooked off, 15-30 seconds. Turn off heat; add sesame ginger crunch and stir to combine.
  3. While chicken cooks, massage rice package to separate grains; partially open package. Microwave until heated through, about 90 seconds. Microwave times may vary. Be careful when handling hot pouch.
  4. Trim and thinly slice scallions. Crush cashews in their bag. Divide rice between shallow bowls. Top with stir-fried chicken and pineapple and broiled green beans. Drizzle with spicy mayo and top with scallions and cashews. Serve.

Recipe Tips

Keep a close eye on the green beans under the broiler to prevent burning.

If you prefer extra heat, add more spicy mayo or a dash of sriracha.
