Transfer to a paper-towel-lined baking sheet and cover with foil to keep warm. Repeat with remaining tortillas, adding more oil between batches. If the pan gets too hot, lower the heat.
- Drain the pickled slaw and stir in half the sesame seeds. Divide the tacos among plates. Top with slaw and crispy fried onions, then drizzle with Sriracha mayo. Garnish with scallion greens and the remaining sesame seeds. Serve immediately.
